Homemade Chicken Salad

2 chicken breasts, cooked
¾ cup mayonnaise
1 large carrot
¼ cup dried cranberries
¼ cup chopped walnuts
1 tsp Duxbury Saltworks Classic Sea Salt
Freshly ground black pepper


  1. Dice or pull apart chicken into bite-size pieces. 
  2. Peel carrot and grate into a medium bowl.
  3. Add chicken pieces and remaining ingredients to the bowl. 
  4. Mix to combine.
  5. Serve on lettuce leaves or your favorite sandwich bread. 

✧  Rotisserie chicken from your local supermarket works great in this recipe.
✧  Substitute chopped roasted pecans for the walnuts.
