Quick Pickled Vegetables
3/4 cup Rice Vinegar
2 tbsp Granulated sugar
2 tsp Duxbury Saltworks Autumn Blend
1 cup Raw seasonal vegetables
✧ Julienne vegetables and set aside.
✧ In a small bowl, whisk the remaining ingredients until combined.
✧ Pour liquid into a mason jar, add vegetables, and cover tightly.
✧ Tip jar upside down a few times to mix, then refrigerate.
✧ Flavor will be more vibrant after five days, but you can start using in a two days for a milder pickling flavor
✧ For vegetable selection, choose whatever is in season or in your fridge. Just make sure to keep the cut size uniform. Yummy combinations include cucumber, garlic, and green beans or try beets, yellow peppers, and purple onions.
✧ Use this recipe as a side dish for anything your grilling, or as a topping on salads. It also adds tasty crunch to sandwiches.
